    Interactions between Street Food and Food Safety Topics in the Scientific Literature—A Bibliometric Analysis with Science Mapping

    Street food (SF) consists of ready-to-eat food prepared and sold on the street. This food constitutes the food traditions of local populations in many countries of the world. SF characterizes a large number of cities around the world, from New York to Paris, from Palermo to cities of North Africa, China, India and Japan. SF is inexpensive and prepared following traditional methods that meet local consumer preferences, culinary culture and lifestyles. Moreover, SF allows a unique experience for tourists who also want to experience a destination through traditional food consumed on the street together with the locals. Nevertheless, SF is linked to several health hazards. Hence, several studies discussed on the compliance with hygiene and food quality requirements that SF vendors should guarantee, to ensure human health. So far, there is no bibliometric review attempting to provide an objective and comprehensive analysis of the existing scientific documents that simultaneously study the scientific topic of SF linked to that of Food Safety (FS). Therefore, the objective of this paper is to provide a theoretical framework of the interactions between studies on SF and FS topics, in order to discover if the combined topic of “Street Food Safety” (SFS) was investigated as a topic in its own right. A bibliometric analysis was carried out analyzing 276 scientific contributions from the last 21 years, indexed in the Elsevier Scopus database and in the Clarivate Web of Science database. The results showed a very strong interaction between the two topics and many others in several scientific sectors; In particular, the topic of SFS involves many disciplines of social sciences. The results highlight that the scientific topic of SFS exists but not consciously, and it is believed that the research interest in this topic can grow considerably in the coming years, also because of the current COVID-19 pandemic situation that we are experiencing

    Commoning of territorial heritage and tools of participated sustainability for the production and enhancement of agro-environmental public goods

    The purpose of this paper is to analyze how the commoning heritage processes find application for the production of agro-environmental public goods in contexts of high socio-economic marginality and environmental vulnerability, characterized by abandonment and from the consumption of agricultural land for food use. The purpose is to understand how these processes are able to influence, at local level, the governance processes for the implementation of environmental protection strategies. The survey made it possible to verify how the commoning processes aimed at the production of agro-environmental goods generate territorial resilience, understood as a community competence able to structure specific forms of social learning based on priorities identified and defined by the communities. The followed theoretical framework and the methodological approach have allowed on the one hand to draw up a taxonomy of the different territorial dynamics and on the other to identify a mixed indicator system, applicable and replicable also in other contexts, able to describe its dimensions analytically. The assessment of the cognitive elements related to the territorial fabric carried out through the proposed approach has allowed to demonstrate how the knowledge of the territorial capital contributes to the activation of forms of collective intelligence necessary for decision-making processes

    Does mild COPD affect prognosis in the elderly?

    <p>Abstract</p> <p>Background</p> <p>Chronic obstructive pulmonary disease (COPD) affects independence and survival in the general population, but it is unknown to which extent this conclusion applies to elderly people with mild disease. The aim of this study was to verify whether mild COPD, defined according to different classification systems (ATS/ERS, BTS, GOLD) impacts independence and survival in elderly (aged 65 to 74 years) or very elderly (aged 75 years or older) patients.</p> <p>Methods</p> <p>We used data coming from the Respiratory Health in the Elderly (Salute Respiratoria nell'Anziano, SaRA) study and compared the differences between the classification systems with regards to personal capabilities and 5-years survival, focusing on the mild stage of COPD.</p> <p>Results</p> <p>We analyzed data from 1,159 patients (49% women) with a mean age of 73.2 years (SD: 6.1). One third of participants were 75 years or older. Mild COPD, whichever was its definition, was not associated with worse personal capabilities or increased mortality after adjustment for potential confounders in both age groups.</p> <p>Conclusions</p> <p>Mild COPD may not affect survival or personal independence of patients over 65 years of age if the reference group consists of patients with a comparable burden of non respiratory diseases. Comorbidity and age itself likely are main determinants of both outcomes.</p

    STREET FOOD AND FOOD SAFETY: A DRIVER FOR TOURISM?

    What link is there between tourism, street food, and regulations on food safety for street food? Street food is characterized by three elements: it is cheap, it's convenient and is easily obtainable around the city through kiosks and/or vans, located at street markets, festivals and especially in highly frequented tourist locations.\ud One element that should not be neglected is given by because it is decided to consume food on the street, certainly for the time need to do it quickly or to save. But also for the pleasure of being part of traditions, places and cultural landscapes in spite of social, cultural and economic. Everything depended, also, by the crisis of progress made globally with repercussions on consumption and therefore the duration of the holidays.\ud In this article we will focus in analyzing a phenomenon of gastronomy benefit from traveling, gastronomic sciences related to poor food, or “street”, a quality of food that conforms to the essential elements such as flavor and aroma, the sustainability of production processes, distribution and consumer, involved in the food chain.\ud Therefore it needs to lead the tourists to discover the identity of the territory, through a tour of the dual value - that of the “typical and cultural and environmental product” and that of “typical food product”

    Influence of Coherent Context for Positioning Distinctive and Iconic Sicilian Sparkling Wines: Effect of a Sensorial Experience on a Gulet

    Spumante wines produced in Sicily region (southern Italy) have sensorial characteristics significantly different from those produced in other Italian regions, because of the great differences of terroir. Offering a product included in a coherent and consistent context allows consumers to differentiate in the marketplace. The aim of this study is to propose solutions for Sicilian wineries for positioning Sicilian Spumante in the market, based on empirical data. Moreover, it was investigated whether a positive experience in a context consistent with the Sicilian sparkling wines could influence consumers’ consumption intentions. A blind sensory test was performed by 146 expert wine tasters. Opinions regarding sensorial quality, value, and suitable selling place for all wines tasted were investigated. Out-of-context and in-context preferences were analyzed. Development of the unipolar model to describe the stimulus-organism-response (SOR) process was attempted.     Circular economy and agritourism: a sustainable behavioral model for tourists and farmers in the post-COVID era.

    Introduction: In recent years, issues related to environmental and ecosystem protection have been given greater consideration than in the past. The goal of adopting sustainable development models is vigorously pursued in the European Union and is reïŹ‚ected concretely in the new Common Agricultural Policy 20232027. The circular economy can certainly be an emerging economic response that can eectively replace growth models centered on a linear view. Agriculture and tourism are two crucial sectors where the “green transition” should be encouraged to help achieve sustainability goals through economic circularity. Agritourism’s activity may be relevant in contributing to a behavioral change based on ethical choices. The study aim is to ïŹnd out if agritourism can be the forerunner for the green transition. The objective is to know motivations and current level of awareness and adoption of concrete behaviors of the circular economy by agritourisms and their guests. The tourists’ preferences for Sicilian agritourism oerings were also observed. Methods: Two types of surveys were conducted: a Census of the Sicilian Agritourisms active at an online travel agency and a sampling survey of the agritourism’s visitors. Results and discussion: The results showed that agritourism by its very nature carries the green transition, partly due to the enormous ïŹnancial support of the new CAP. Second, it is a provider of quality food and ecosystem services, and a promoter of healthy behaviors and consumption of seasonal and local short-chain products by visitors, so it can be a vehicle for the adoption of the Mediterranean Diet as a sustainable lifestyle and food system. Tourists’ propensity to seek out environmentally friendly products and green services can help to improve ethical, responsible, and sustainable tourism.     UIDB/05021/2020 UIDP/05021/2020Wine Routes develop inside the larger context of wine tourism (WT), which is increasingly important for rural communities. Italy is one of the most important countries in the world for wine production and tourism. Sicily is one of the leading regions in Italy for wine production and wine tourists. This study focuses on the Sicilian wine routes (SWRs) and gives an excursus of their development during the last ten years, highlighting strengths and weaknesses. Moreover, the study wants to make an attempt to bridge the existing gap in the literature and highlight the nature and extent of the contribution of the SWR to the development of the WT ‘product’ from the perspective of the increasingly booming sustainable–rural tourism. Face-to-face interviews were conducted along the SWRs with 283 wine tourists, 65 wine enterprises, and eight expert stakeholders. The motivations for tourists to visit the first time and their intention to return were investigated by the explorative factor analysis. Moreover, the wine tourist profile was highlighted. Findings outline some specific features of the general experience economy model where visitors’ emotional involvement and local cooperation appear crucial for the integrated territorial development of the backward rural areas of wine regions in different parts of the world.     Discriminative and predictive properties of disease-specific and generic health status indexes in elderly COPD patients

    <p>Abstract</p> <p>Background</p> <p>The association between bronchial obstruction severity and mortality in Chronic Obstructive Pulmonary Disease (COPD) is well established, but it is unknown whether disease-specific health status measures and multidimensional assessment (MDA) have comparable prognostic value.</p> <p>Methods</p> <p>We analyzed data coming from the Salute Respiratoria nell'Anziano (Respiratory Health in the Elderly – SaRA) study, enrolling elderly people attending outpatient clinics for respiratory and non-respiratory problems. From this population we selected 449 patients with bronchial obstruction (77.3% men, mean age 73.1). We classified patients' health status using tertiles of the Saint George Respiratory Questionnaire (SGRQ) and a MDA including functional (the 6' walking test, WT), cognitive (Mini-Mental State Examination, MMSE) and affective status (Geriatric Depression Scale, GDS). The agreement of the classification methods was calculated using the kappa statistic, and survival associated with group membership was evaluated using survival analysis.</p> <p>Results</p> <p>Pulmonary function, expressed by the FEV1, worsened with increasing SGRQ or MDA scores. Cognitive function was not associated with the SGRQ, while physical performance and mood status were impaired only in the highest tertile of SGRQ. A poor agreement was found between the two classification systems tested (k = 0.194). Compared to people in the first tertile of SGRQ score, those in the second tertile had a sex-adjusted HR of 1.22 (0.75 – 1.98) and those in the third tertile of 2.90 (1.92 – 4.40). The corresponding figures of the MDA were 1.49 (95% CI 1.02 – 2.18) and 2.01 (95% CI: 1.31 – 3.08). After adjustment for severity of obstruction, only a SGRQ in the upper tertile was associated with mortality (HR: 1.86; 95% CI: 1.14 – 3.02).</p> <p>Conclusion</p> <p>In elderly outpatients with mild-moderate COPD, a disease-specific health status index seems to be a better predictor of death compared to a MDA.</p

    This paper, affecting an analysis comparative of the different regional typologies, it analyzes the concept of weakness, with reference to the phenomena of degrade and disarrangement of the grounds, inside the processes of identification of functional territorial articulations to the statistical analysis and the decisions of policy, showing as despite the existence of a fed together of interpretations none of the examined typologies both indeed able to furnish a representation suitable of the phenomenon, since the different procedures of regionalization introduce not suitable discriminatory methodologies
